Cooking for the wise: Making it YOUR recipe

Different people work differently when they cook. Some people are very exact and stick to the exact recipe, down to the last quarter teaspoon. Others like to take a recipe and make it their own. Here are five tips on how to handle recipes.

  • Make sure to read the recipe before you start it. Line up your ingredients, and make substitution for items you don't like.
  • Go with the flow. You're a good cook; relax and make changes. You know you can!
  • Taste as you go. Remember that if the food is going to cook down, like soup, you'll want to under-season as the results will be very concentrated.
  • Unless you're a chemist, stick to the basics of the recipe when you cook. Substitute choclate chips for nuts or dried apples for raisins, but don't change the amounts or the basic ingredients.
  • Don't compromise on quality! You're putting your time and love into this, so make it worth it!
